To produce their pasta, factory Attilio Mastromauro uses high quality durum wheat semolina, carefully selected and controlled by its internal technical laboratory. Quality standards are strict: semolina must come from the kernel of the wheat grain, without any bran trace. It must also look homogeneus, golden yellow coloured and rich in proteins. If semolina is judged suitable for production, it is then mixed with water, kneaded in the presses and passed through different draw plates to obtain the chosen shapes, the so-called “cuts”.
After this stage, pasta cuts enter the drying process, the most delicate stage of the entire production process since it must guarantee a balanced water evaporation. Last, there are the computerized stages of heat stabilization, packaging, preparation of carton boxes.
