Sauvignon Blanc 85%, Feteasca Alba 15%. Separated wine making of the varieties. The Sauvignon Blanc has been harvested from the best parcels of the “Valea Gardului” vineyard, with 70% of the grapes selected from 27-31 years old vines and 30% from a collection of 5-6 years old vines of three of the most valuable French clones. Reductive wine making used, in order to preserve the fresh primary fruit flavours of the grapes was completed with traditional techniques as “battonage” (whereby the lees are stirred up) to add sofisticated secondary flavours to the aromatic profile. The primary fermentation respects the principles of a spared and rapid flux. 5 to 6 hours maceration at 12-15°C. The grape juice is separated only by gravitation techniques and settled at cold temperatures for 24 hours. Alcoholic fermentation occurs in small stainless steel tanks of 70-80 hl at 10-12°C using cultured yeasts, followed by 3 months maturation on lees (in the case of the Sauvignon Blanc).
